Scallop RePUBlic has four wines on tap. Yes, wine on tap. This is part of our “Bottle-Free” policy. Wine in kegs stays fresh, from the first glass to last. There is no oxidation, no corked wine, and no spoilage.

Pacific Standard Chardonnay – 2015
From a cool vineyard site in Santa Barbara that brings bright, citrusy, white fruit and mineral notes. A portion fermented and aged in stainless steel and a portion fermented and aged with just enough oak influence to add some creaminess on the finish. 100% non ML. 13.5% ALC.

Gazerra Pinot Grigio – 2016
Grapes are grown in Western Sicily on high altitude vineyard sites located between Palermo and Salemi, and averaging 400 meters above sea level. The wine was fermented and aged in stainless steel to retain freshness and minerality. The vineyard is farmed sustainably and the grapes are hand picked. It is light to medium bodied, crisp, clean and refreshing with aromas of grapefruit and lemons that carry through on the palate and are joined by a delicious briny note on the finish. 13% ALC

Pacific Standard Cabernet Sauvignon – 2013
California appellation (sourced from Mendocino, Lodi, and Sonoma) Blueberry, dark cherry and currants with toasty vanilla and chocolate notes. The palate is full and broad with soft ripe, velvety tannins and a long finish. 14% ALC.

Gazerra Nero D’Avola – 2014
Grapes are grown in Western Sicily on high altitude vineyard sites located between Palermo and Salemi, and averaging 400 meters above sea level. Considered one of the best red wine grapes of Sicily. Also known as “Calabrese”, suggesting origins in Calabria on the nearby mainland. Rich red fruit notes of pomegranate and floral dried cherry lead to juicy ripe plums and just a hint of oak on the palate. Medium-bodied with supple tannins.

Noble House Riesling – 2015 (bottle only)
Pristine honeydew, apricot and yellow peach notes entice on the nose. Pleasantly off-dry in style, the palate is lush and tropical, bursting with melon and mango flavors. A tight frame of acidity lends vibrance and edge.
